Note that TFT zombies are not undead nor are they creatures (like say elementals are).
They are instead a form of (temporary) enchantment. If you want to scare the players then have their goblin sorceresses dropping ordinary zombies with a snap of her fingers (You do have a goblin sorceresses with exactly this spell to deal with a certain annoying lizard, no?) and then have some fungus zombies shamble up.

Zombies are actually "Magical Creatures" as per page 85 and not "Intelligent Monsters" (page 80) with the actual undead.
I.e. a Dragon or Ghoul won't be stopped by a pentagram while an Apep or elemental will, right? Compare Zombie(T) vs Create/Destroy Elemental(S). Remove Thrown Spell will disenchant any zombie.

Exactly; Avert and Remove Thrown Spell can serve as the TFT equivalents of turning/destroying undead. (of course they do other things as well, but they get this job done).
