Demon of Thirst and Despair to DF
I was reading about a demon of thirst and despair from Ars Magica and the description says this demon causes thirst to the PCs and then despair and finally it forms a pool of water to drown the PCs. So how would you make this monster viable in DF? Thanks.

While I'm not sure how to answer your question, this demon reminds me of a parasite that kills in a disturbingly similar fashion.
It infects an ant, causing dehydration, and then forces a suicide by drowning to continue its life cycle in a body of water.

Thirst is basically Fatigue damage enhanced with a Hazard.
Despair is likely an Affliction of Chronic Depression. Then Create: Water plus Engulfing attack to kill.

Step 1 is Fatigue Attack with Dehydration Hazard.
Step 2 is Affliction: Chronic Depression. Step 3 is Binding Attack with Engulfing and Elemental: Water. |

Unless the Hallucination effect is in the source material, I don't see it suggested from the OP's primary post.

Step 1: Fatigue attack with Dehydration Hazard.
Step 2: Mind Control, possibly with Emotion Control, to create despair and the compulsion to drink until sated. Step 3: Illusion to create the illusion of a nearby body of water to drink from. Since the water in step 3 does not exist... well, work it out. Yeah, I know it won't drown you, but the inability to recover FP from the "water" is probably the next best thing. Slap No Signature on the Fatigue attack, and the thing can keep assaulting you without you knowing it, and once you hit -1xFP, you're taking damage off your HP.

While that doesn't sound perfectly suited to how I read OP, it does perfectly fit movie desert insanity and mirage sand eating. :)
