The latter parts of the table don't seem very playable, but perhaps that is intentional.

Am I understanding it right that the 'power-level' will keep accumulating when casting spells? In other words, the more spells the character casts, the more demonic they become?

I'd probably make up some lore for the personality-altering effects of the transformation. Is the character turning into a demon physically AND spiritually, or are they being possessed by a demon who attempts to manipulate or take control over them, for example?

Ye, the last part will be probably changed a bit, but that's the spirit: The sorcerer himself becomes a demon, in every single aspect. Just imagine his power source like a gate. The more the sorcerer draw strength from the gate, the more it becomes bigger, and uncontrollable. The inner powers take control over the sorcerer who becomes a demon, but after some time, the gate starts to close again.

In my settings, sorcerers were tracked down and slaught for centuries. But at one point, a lot of them became living gate and the Hell unleashed into the Material Plane and there was the big war. I wish to let my PCs the same feeling of power and dangerousness.

The tables are a good start, but i'm opened to any tip!

Once the demonic blood-lusting part of them has taken over, why would they ever willingly return to human form? I'd figure the demon personality would just use the right amount of power to remain demon, but not burst open and become a huge gate. Especially since the demon could use the gate as a hostage "If you follow me I will become the gate that dooms your land!"
