Default Roleplaying the Oregon Trail (You have died of dysentery...)

I've found the 3e Old West sourcebook. It relates in general to the West, but not exclusively to the trials and tribulations of a caravan of settlers (Western or otherwise).

I'm curious if anyone has run a campaign inspired by settlers braving the trail, possibly but not necessarily inspired by the game.

Specifically what type of encounters did you deal with and how meticulously did you handle the rules for food, supplies and disease?

Generally, I'm curious about running a campaign with focuses not just on encounters with hostiles and puzzle solving, but heavily revolves around resource management and health management.
