SM 3 difference is the difference between house cats and people. That's not a very fair fight, unless the "human" is incredibly dumb and unskilled.
Rapier wit to taunt the giants into extra stupid actions might be useful.

Punch giant in the groin, then punch it in the eye when it doubles over in pain. Or figure out something with climbing/scaling to reach the bits they don't want you hitting.

Hmm that is a good point.
To attack the smaller foe they need to bend over or something (try the section on attacking from different height) or kick.
Kicking of course is slightly harder to hit but should make sweep, trip and throw attacks easier. I dont recall an option that it does though.

Yeah, I was going to suggest One Man Army as a giant killing style.

I'd add enhanced dodge rather than block, Acrobatic stand, Breakfall, Evade, Retain weapon (all) and Flying lunge (Spear).

Yeah, that's where my mind went. If we're dealing with a TL 3 setting, the best bet is probably either an archery style featuring Targeted Attack (Giant Eyes) (especially if one-eyed giants are known to show up), or a Big Game Sniper type style with emphasis on Artillery (probably Scorpion but small Ballistae might be used, especially if nasty alchemical payloads with incapacitating effects are available), Stealth, Camouflage, and Targeted Attack (Giant Vitals) so they can sneak around, try to drop the beast at a good range with a single shot, and fade with a quickness (possibly Tracking it if it's bleeding badly; put it on the optional Skill list) if it's still standing.

If you get to fight on your terms, I'd suggest Traps for any sort of foot traps or pitfalls, and a lot of smaller spaces with thrusting weapons to negate those massive clubs giants like to carry.

Otherwise, I'd look at Spear, Polearm, and Two-Handed Sword for both reach and damage, and include Sweep, TA (Legs or Vitals), avoid parrying and blocking (since this can break your weapon or shield), and use a LOT of defensive attacks, all-out-defense, and wait maneuvers to stay alive until you can topple and then kill the giant.

Alternative, if you want a more aggressive (and suicidal) style, there's always Flying Leap, + Flying Lunge + TA (Axe/Mace Swing/Skull)....possibly with some Power Blow for good measure. Just don't mess up or you might be mashed into anime jam.
