One of my players tells the story of a time he was playing in a Call of Cthulhu campaign, and the Keeper told the players that the floor of the room their characters had entered was tiled in octagons. One of the players said, "It's not possible to tile a floor in octagons," and the Keeper answered, "That's right! Roll for SAN loss."

I think you'd need a specific size of octogon for a specific hyperbolic curvature. But ultimately, yes.

None of my players play cartographers so there's no real reason for them to be in charge of maps. They do request maps from time to time to get a good visual and they'll jot on a scrap paper to show me where they are or what they're setting up.
