The question, I think, is whether your specific template justifies acquiring skills. Turning into a giant rock golem can justify learning skills suited to your new form; but there's no in-setting justification for suddenly gaining skills.

Conversely, if the template is your character being possessed by a spirit, then suddenly gaining skills makes sense, because you are gaining access to said spirit's skills.

I would also rule, depending on how active said spirit was, that this could help with training purposes.
