Hit him in the hands, hit him in the feet, hit him in the nose, hit him in any of the myriad spots armor doesn't fully cover.

Hitting people in the limbs and targeting chinks in armor may be a bit too realistic for DF when you're emulating D&D with their lack of target locations, but historically when people had armor they lived to take wounds on their limbs.
