Default [Sorcery] Create Food & Water

How would a Create Food or Create Water spell work in Sorcery?

Per RPM I know created consumables need to last three days to be eaten / digested

Not sure how best to do such in Sorcery

Use the write up for Feed the Masses from GURPS Powers: Divine Favor (p. 9). That's the best one I've seen to do this.

The problem with the Divine Favor - Feed the Masses is it is more or less useless for the (at least to my experience) primary uses of Create Food / Water . . . which is to use as a replacement for rations and water to avoid encumbrance (similar to using Continual Light spells to avoid having a hand occupied with a torch and lugging a stack of torches along)

Create Food and/or Water 20 points per level seems quite usable to me.
It's all the limitations in the supplement that render it not universal.

I should have been more explicit - I'd start there. Maybe something like:

Create Food/Drink 1 (Cosmic, Doesn't Require Creation Pool, +300%; Reduced Fatigue Cost 2, +40%; Sorcery, -15%) [85]

There, now you can create 10 lbs. of food or water and you don't have to spend character points to keep it around. It's permeant. Arguably, you could use "Extended Duration, Permeant, +300%" but Cosmic works better I think. I also wouldn't allow that sort of Cosmic on just any Create advantage either. Some I'd charge WAY more, but for food and water that seems fair. In fact, you could say it's +150% in this one instance - the food and water last long enough to be processed by your body.

I shared it with the DM and he liked the +150% version in this instance, so we are going with that in the game

What category of Create is this: Large, Medium, Small, Specific Item?
What category would it be for only Food?

Sure.

Imean, it can look like all kinds of things, but in the end it's fuel. It's like saying yuo'd need to spend extra points to buy wood types. In the end - it's just wood.
