As far as I'm aware Judas wasn't known as a thief before being made the group's treasurer anyway. Matthew was the one with a background in tax collecting, which is pretty close to the same thing.
And in regards to the "thief tax", every player I've known to play the Rogue archetype plays "Not that kind of thief" - basically, a character who is good at picking locks, disarming traps, solving puzzles, and spotting secret doors and loot. I've not yet seen the scoundrel who robs his friends and leaves the group as a whole more vulnerable outside of parodies, though I'm sure they exist at some tables (and are probably accepted as part of the fun by some groups).
