What would be the essential skills a knight would have, that any aspiring knight should possess?

Fantasy genres would adjust realistic needs and expectations quite a bit.
But what knight lacks a loyal squire or pack mule(s)? Whether Samwise, Jeeves, or Nodwick lead to very different sorts of interactions and play styles, I'd say.

riding, lance, sword, shield at the bare minimum. soldier or tactics, depending on time period and envisioned role in warfare.
That gives you at minimum a fairly brutish knight, but fairly brutish knights did hang around.

I would add Heraldry, since a knight needs to be able to identify other "houses" and factions--especially if they're foes!

Wrestling is important in close-combat fights and to avoid being destroyed if one falls over (or off a horse) during battle. Likewise, Knife and Quick-Draw (Knife) to deliver killing blows in wrestling.
If we're talking fantasy, it's best to get Crossbow as well. It makes ranged combat more viable, and the mighty strength of the average knight makes a ranged crossbow attack a possibly combat-ending move. |

Tactics is optional-though there are examples in history of knights doing neat jobs there are also examples of them being blundering oafs.
Poetry is good but not necessary Board Games(chess) Some athletic skills. Stereotypically jousting as well as some imports like polo. Probably hunting. Survival(forest), Sex Appeal Animal Empathy Butchery(deer, boar): Perhaps a lot of the grunt work on a hunt will be done by drivers but knights had a fair knowledge of which organ was where and how to take it out.

Yrthrian knights seem to have different flavors depending on where they are from, which order they are pledged to, etc.
