You could have a look at the elemental correspondences used in Naruto for some ideas.
Briefly, The Land of Fire's ninja village is a forest village (Konohagakure). Similarly, water is associated with mist; Wind is associated with sand; and Earth with rocks and a village hidden in the rocky mountains. Lightning is the 5th main ninja country, with a village in the clouds. As for metal, the Land of Iron has no ninja association, but is represented by sword-wielding samurai. This suggests fantasy races of- Fire - forests - elves Wind - sand - reptilians But for water, earth and metal, and lightning, I can't come up with anything immediately.

I thought the Japanese sort of copied the Chinese in regards to the elements?

I think the Japanese have two different systems. One is the Chinese earth/metal/water/wood/fire; the other is earth/water/air/fire/void, I believe. In any case I did study the Chinese system thoroughly, and the system in Naruto does not seem to be the Chinese system, whether it was Japanese or Sanskrit or something someone made up.
