A previous discussion pointed out that you can't breath through solid metal, so the helmet design would still need to perforations and/or gridwork over the mouth. I don't know if those airholes would be enough to keep the eyeplate from fogging.
I think you could also put some cloth padding over the cheekbones and bridge of the nose, and that might act as something of a vapor guard against the worst of the moisture from your mouth. Add some perforations around the eyebrows to help vent sweat, maybe? Since the character who is making these faceplates is canonically a peasant from a country with a Mediterranean climate, she may not have experienced severe enough weather swings for the fogging to be a problem yet. It might be an annoying feature of the armor in a couple of weeks when she's in the northern plains and it gets really cold.

I suspect it would be more like a windshield fogging up. |

Maybe some kind of metal partition to keep the eye section separate from the mouth part like a little insulating air pocket.
Still without some good ventilation, overheating if not suffocation would be a more important risk than loss of visibility.

Having used transparent masks, fogging is an issue even at quite warm temperatures. The relative humidity of breath is 100% at body temperature (98.6F), it obviously gets mixed somewhat, but if you mix breath evenly with dry air, the dew point is still 76F.

A paintball mask (and my glasses) will fog up in just a few minutes. My glasses fog up, very quickly, when wearing my VR Headset if I exert myself too much (I'm looking at you, Robo Recall).
Both of those have ventilation, and the VR is isolated from my nose/mouth. Actually, leaving the bottom of the VR open slightly (not seating it fully), seems to keep my glasses from fogging, so long as I'm not playing Robo Recall. |

Any sealed enclosure over flesh will eventually fog unless the exterior temperature exceeds skin temperature, and will do so fairly quickly if over a mucous membrane (such as eyes).

Seriously though, low tech metals require a fairly hefty amount of cleaning to remove rust and grime. In some climates iron and steel will rust up fairly quickly.
