Oh, he dies easily enough. He just comes back. Nobody knows for sure why, and his mind's been messed up enough by being killed so many times that asking him doesn't help. He tastes horrible, so most of the monsters have given up killing him.

There was a bard who claimed this must be the legendary thief who claimed that every coin in the kingdom had passed through his hands, but he sobered up very suddenly and ran away when he got to the part about the curse.

This would be a classic scenario for the avatar of a god. Perhaps a god of charity on the lookout for flickers of generosity in the grim darkness.

My dirty hobo Elven Sage is basically a few short steps away from this... the idea being that as a Sage he knows how to survive in the dungeon, has Omnilingual so he can talk to everyone in the dungeon, and has enough Stealth and Diplomacy to keep himself useful trading secrets to the denizens.

An ex-henchmen who got left behind when his party wiped and has slowly become a permanent fixture in the megadungeon...

Demons, Devils, and all manner of "Outsiders", to use the term from another popular game. Humanoids can be fun, but they're easy to oversplit, so I stick to a few basic classic types at most. And Undead, because, well, Undead. Basically, I use whatever fits my metaplot, and that usually has a theme.
