Default Shadow Form and Mass

Does a character using Shadow Form have mass? Would "walking" on a pressure plate trip the trap?

Ordinarily I would say no. The Basic Set says that you're two-dimensional, able to slide through the thinnest cracks, and unaffected by gravity, and that you can't carry objects.

However, if you take it with Finite Thickness (from GURPS Powers), I would assume that you have SOME mass, though probably much less than if you were fully three-dimensional.

Yes, Shadow Form is massless. It allows you to ignore gravity and keeps you from being able to do any physical attacks. It's a limited form of Insubstantiality.
