Can I use a spin or bootleg turn to spin my car around to the back and then use a Paint Spray card?

After looking at the cards, I would have to say no. The key item here is that the paint spray is only usable "after any Attack against your Back."

Both the spin and the bootlegger reverse don't change which side the attack was against, just where the damage goes (be sure to check the expanded text in the rules).

On the other hand, if you wanted to play a paint spray against an attack on your back and then use a spin or bootlegger to apply the damage to another side, that should work.
