If all monsters are counted as undead, does this include monsters not yet played by another person? Are they undead while they are in your hand and not in the battle yet?

I believe so :) "All monsters" means all monsters, right?

While in your hand, the cards are merely cards, but the moment they hit the table they 'become' the thing (noun, verb, adjective) described on them.
In this case, they become a monster, and while zombie plague is in effect, an undead whatever.

That's generally true, six's monkey, but this is one of the cases where the rule of cards in the hand being just cards isn't absolute. You can add Undead monsters into a combat already involving other Undead monsters without using Wandering Monster. If the monster only became Undead once it hit the table, then that would be an invalid play.

Perhaps the correct way to technically describe this is that while cards in your hand are just cards, when it comes to determining if you can play them, you consider them to be the type they will be after they have been played. This means you are allowed to play a non-Undead monster into a battle where other Undead monsters exist provided there is an effect in place that will immediately make the monster you want to play Undead or if you play a card that immediately makes the new monster Undead at the same time as you play the new monster.
