Default Man o'War (booty2) discard Items to grab Enhancer

Can I discard Items amount more than Enhancer's value?
Can I grab Enhancer to my hand and play it on other ship?
Can I play it immediately if I am in combat?

Yes. There's an implied "at least" there.

Nothing in the text says you must play the Enhancer that you take, on this Ship or any other; you can just put it in your hand if you want. So yes, playing it on another Ship would be legal.

No. Ship Enhancers are Items and follow Item rules.
