how many expansions will be out in the future for the zombies set?

one that's announced here that's coming out next month. After that we don't know they don't announce stuff that far in advance.

We usually don't announce products until we're pretty confident of their shipping date. We might hint broadly at them, and of course we playtest them, but we certainly don't have a detailed plan more than a year or so into the future. So right now, what I can say is that Zombies has one expansion that's on the boat and will be in stores later this summer. I certainly can't BEGIN to hint at our plan for Zombies 3 in 2012 (or anything else, other than the already-leaked Munchkin 8).
