Science! canonically includes everything on p. B175 plus any of the following that the GM regards as "science": Alchemy, Anthropology, Archaeology, Cartography, Criminology, Expert Skill (Epidemiology, Hydrology, Natural Philosophy, Xenology, and any other specialty that the GM allows), Physiology, and Sociology. Things that couldn't be described as "the study of" probably wouldn't fit, and even things that could be described that way wouldn't fit if they depend significantly on the unprovable (e.g., Theology). By that token, I'd exclude Hypnotism, as it isn't a field of study but a practical technique; it is to Psychology as, say, Smith is to Metallurgy.

I probably wouldn't include it in Science!. Though I'd certainly allow you to roll against Science! at a reasonable default to try it out. Maybe at a -2 or -3? This would seem particularly reasonable at lower TLs where such esoteric arts would be more likely to be considered a science.
