FWIW, I'd find a big book of real critters a lot more useful than a big book of made-up critters. The former saves me a lot of research and effort. Assuming of course that said critters have CP totals so that they can be used with Ally and Alternate Form.

I did, last year, for a predators e23 book. At the time I was told that SJG was "evaluating other approaches to the bestiary line" and that they were "close to a resolution" on that.
I've become somewhat gun-shy about submitting bestiary-related materials; that was the second rejection on the same general subject (the other being for something that I was working with Scott Maykrantz on). Also, just checked, and all of the bestiary listings have been removed from the e23 wish list, which (based on what Steven Marsh wrote to me a year ago) suggests that there is in fact something in the works, and they don't want submissions at this time.

It's my understanding that GURPS Bestiary has been attempted and put on hold more than once, due to a variety of factors. I can imagine how difficult it must be to put together: it requires more art than most other books and is 99.9% crunchy.
