There's a really great add-on to Civ 5 that lets you create and edit game maps. So you can go in and have it create a world and modify it, or create one from scratch.

The only major drawback is that it's not possible to directly import the maps into a graphics engine or print them. It can be done manually, which is a pain, but you can produce great maps that way.

I have different layers for cities, points of interest, zones of control, even weather and ocean currents. I just leave my computer up with the map and can select whatever I need to see.
