I myself am strongly encouraged (there had better be a fire visible from orbit for the exception, if production) to not do anything from Friday to Sunday.

Another game I play has a rigid (as in "unless it costs measurable amount of money") Patch Tuesday schedule, whereby if the update misses or the bug does not require an immediate hotfix (notable amounts of money), it gets postponed to the next week.

I like Tuesdays best of all myself - everybody reviews Monday, patch goes live Tuesday, and the rest of the week you deal with the fallout.
