I don't use GCA, so I don't know. But if your characters don't like character creation, you could always create their characters for them after asking them a series of questions:

1) What class would you like to be? You can be an x, y, or z.
2) What race would you like to be? You can be an x, y, or z.
3) You should have some disads, would you like x, y, or z.

Give them no paper, you just jot down all the notes and make the character's for them.

Though...if they really don't like mechanics, have you thought about running something in a rules like system for them?
