Yes, players can play equipment, Classes or Races, and the like before the game starts. Technically, GUALs can't be played until the first player starts their turn, but it doesn't actually break anything if you play them early. Curses CANNOT be played until the official start of the game, however -- it's unfair to hit someone with a Curse when they're still looking at their cards.
A player who has been accepted as a helper in combat cannot change around their Items at that point. They must make any such changes before accepting an offer to help.
