I think 500ml in one second with no roll is a bit optimistic for an average human. I'm not going to reality test it today, but I'd think less than half that would be more like my limit. I know that I struggle to down a pint of beer in one go and it absolutely takes more than one second.

One option might be to have the roll be against Carousing! That way your stereotypical barbarian or dwarf can quaff his healing brew with the same enthusiasm he approaches his ale.
