Re: About thieves and end of the game
First question: Your hand size does not matter until the end of YOUR turn. Having more than five cards in your hand during your turn is fine, as long as you end with only five.
Second question: You cannot sell items or use a GUAL card to gain the winning level. (A very, VERY few cards will let you, such as Divine Intervention, but they are absolutely explicit about granting the winning level.) That said, once you have attained Level 10, it is too late for the other players to do anything about it unless they have a card that says it can prevent the winning level.
