There is no changelog for our PDFs, nor do I expect us to add one. (It's just too much work figuring out what would go in there, compared to the payoff; from our point of view, part of the point of PDF is that -- if you're concerned about having the latest version -- you can just re-download it.)
However, I should be able to make things easier for you. In general, PDFs that are updated will have their version number and date changed; the version number and date are in the lower-right corner of the cover. (They're often even visible from the larger-size cover image; for example, see this one for
GURPS Dungeon Fantasy 8: Treasure Tables.) You should be able to compare that version number with what you have printed out (or in your saved PDF); if it's the same, then you shouldn't need to worry!
